More Diners Ordering Entree Salads

Fifty-three percent of family dining restaurant operators, 66% of casual-dining operators and 50% of fine-dining operators reported that diners are ordering more entree salads than they did two years ago, a survey by the National Restaurant Association revealed. "Our survey of more than 1,000 chefs ranks organic and local produce in the top-three hottest menu trends right now, also supporting the popularity of salads," said Annika Stensson, the association's media relations manager.

What is that thingy called?

One of the most frequently asked questions at Green Tango is "What is that thingy called?" The thingy that is being asked about is the knife that we use to chop every salad and wrap. It is called a double bladed mezzaluna. While we don't sell them (although maybe in the future we will) they are easy to find at most kitchen supply stores or online from sites that sell knives. We prefer plastic or rubber handles to wooden (they last longer) and like them at least 9 inches long (You end up working harder with shorter blades). We actually figured out that you get about 45,000 salads or wraps from a knife (at 8-10 chops per) or around 450,000 chops per knife.

Green Tango recently started providing salads and wraps for the concerts at the Koka Booth Ampitheatre (http://www.boothamphitheatre.com/schedule.html) With their picnic in the park promotion you can pre-order salads or wraps from Green Tango and pick up when you arrive at the venue. Pretty cool. Next shows up are Harry Conick on Friday and Robert Cray on Sunday.
