What is that thingy called?

One of the most frequently asked questions at Green Tango is "What is that thingy called?" The thingy that is being asked about is the knife that we use to chop every salad and wrap. It is called a double bladed mezzaluna. While we don't sell them (although maybe in the future we will) they are easy to find at most kitchen supply stores or online from sites that sell knives. We prefer plastic or rubber handles to wooden (they last longer) and like them at least 9 inches long (You end up working harder with shorter blades). We actually figured out that you get about 45,000 salads or wraps from a knife (at 8-10 chops per) or around 450,000 chops per knife.
